Mother's Day with Lots of Love and No GMOs

Submitted by ameyer on May 9, 2014

This Sunday is Mother’s Day so show your mom some love--make her a non-GMO breakfast and goodies!

First, treat her to breakfast in bed. Pamper her with this delicious egg dish from Martha Stewart:

Heart-Shaped Egg in the Hole

Using a cookie cutter or a knife, cut out a small heart shape from the center of a thick slice of organic bread (try Berlin Natural Bakery's bread). Spread each side of bread with organic herb butter.

Heat skillet over medium heat. Sauté bread until golden, about 2 to 3 minutes. Lower heat, and gently flip toast. Break an organic, cage-free egg into heart-shaped hole. Cover, and cook until egg white turns opaque, about 5 minutes. Transfer to a plate along with the heart-shaped piece of cut-out bread, perfect for dipping into yolk.

Add another dish to your mom's breakfast in bed with creamy, fruity stuffed french toast hearts.

Creamy, Fruity Stuffed French Toast Hearts (Serves 4)

3 large organic, cage-free eggs, beaten
1/2 cup organic milk
A couple drops organic pure vanilla extract
1/3 cup organic cream cheese, softened
1/3 cup organic raspberry or strawberry preserves
1 cup organic pure maple syrup
8 slices organic white bread (try Berlin Natural Bakery's white spelt bread)
2 tablespoons organic butter

In a wide, shallow bowl, whisk together the eggs, milk, and vanilla and set near the stove. In a small bowl, mix together the cream cheese and preserves; set aside.

Warm the syrup in a small saucepan over low heat or in the microwave on high for 1 minute.

Spread the cream cheese mixture evenly over four bread slices. Top with the remaining four bread slices to make four sandwiches. Cut each sandwich using a 4-inch heart-shaped cookie cutter. Snack on the crusts.

Melt the butter in a large nonstick skillet over medium heat. Dip the hearts in the egg mixture and cook in the skillet, turning once with a spatula, until golden brown, about 3 minutes on each side. Serve the hearts with the warm syrup.

Cupcakes are a staple for lots of holidays. Your mom will love these! First, make chocolate cupcakes using Pamela’s Chocolate Cake Mix and make frosting with Pamela’s Vanilla Frosting Mix.

Now, it is time to make these Sew Sweet cupcakes featured on Spoonful.

Sew Sweet Cupcakes

Panda’s Raspberry or Cherry Licorice (available at Trader Joe’s and Whole Foods)
A toothpick

Use 1/4-inch pieces of lace to form letters or hearts. For the needle, tie a longer length of lace around an end of a toothpick, then stick the toothpick and one end of the lace into the cupcake.

If you are low on time, try this easy recipe from Delish! These tropical sorbet sandwiches are easy to prepare and incredibly refreshing.

Tropical Sorbet Sandwiches

Organic raspberry sorbet

Organic pineapple coconut ice cream (try Luna and Larry's Coconut Bliss--you won't regret it...this flavor tastes like pina coladas)

Thin crisp butter-wafer cookies or other thin crisp cookies

  1. Place scoops of mango, raspberry, and pineapple coconut sorbet between thin crisp butter-wafer cookies or other thin crisp cookies, like gingersnaps, and freeze.

Happy Mother's Day from GMO Inside!
